Our Koroneiki olives are cold-pressed in small batches by the trusted hands of Koufolias — a family-run mill rooted in Peloponnesian soil and precision. Bottling takes place at the historic Mercouri Estate, where barrels once carried Christos Kokkalis’s rebellious wine.

The Analyst
Each batch undergoes advanced chemical profiling at Multichrom Lab in Athens, led by Manolis Salivaras — chemist, taster, and benchmark in global EVOO analysis. Before a drop is bottled, it receives a full Certificate of Analysis verifying polyphenol concentration, acidity, and oxidative stability.

Quality begins in the field. Together with ENA ENA / Hellenic Fields, we map groves, track microclimates, and benchmark against Greece’s top 2% of phenolic yield. They challenge our assumptions. They keep the ritual radical.
